第一個小時該怎麼做
如果您現在正痛得彎著腰，在辦公桌前、飯店或公寓裡讀這篇文章，以下是能立即幫上忙的做法。停止進食固體食物。每隔幾分鐘小口啜飲少量的水或口服補水鹽（ORS）——不要大口猛灌一整杯，您的胃很可能會排斥。
胡志明市的藥局隨處可見，ORS補水包（以「Oresol」的名稱販售）在每一間藥局都是標準、便宜的常備品——在市中心各郡幾乎每隔一兩個街區就能找到一間，大多數飯店櫃檯與辦公大樓接待處也都會備有。如果您連續幾個小時連小口啜飲都無法保留，很可能需要點滴輸液，而不只是口服補水。這正是我們派上用場的時候。
上門看診實際上包含哪些內容

- 評估：醫師會檢查您的生命徵象、脫水程度與症狀病史，排除比一般食物中毒更嚴重的狀況。必要時會進行基本的血液或糞便檢查，以釐清情況。
- 點滴補水：若您因反覆嘔吐或腹瀉而脫水（大多數病患都是如此），我們會當場為您施打含生理食鹽水與電解質的點滴。這需要大約30至60分鐘，多數人在結束時都會感覺到明顯差異。
- 藥物：視情況給予止吐與止瀉藥物，抗生素則僅在醫師判斷可能是細菌性感染時才使用。所有劑量都依標準臨床指引，並在床邊根據您實際的症狀決定，絕不會事先開立。
- 接下來該怎麼做：清楚說明該吃什麼、該避免什麼，以及出現哪些症狀應該再次聯絡我們。
整個看診通常約需一小時，您全程都躺在您原本所在的地方——不必坐候診室，也不必抱著水桶搭計程車。
自行照護、上門醫生，還是急診？
大多數食物中毒雖然難受，但並不危險，以下情況適合選擇到府看診：
- 過去 24 至 48 小時內開始的嘔吐與腹瀉
- 胃絞痛、噁心或食慾不振
- 輕度脫水——口乾、尿液顏色深、站立時頭暈
- 發燒低於 39.5°C（103°F）
請跳過到府看診，直接前往急診或撥打 115，如果：
- 您在嘔吐物或糞便中發現血液
- 您的體溫持續在 39.5°C（103°F）以上且降不下來
- 您已超過 8 小時未排尿——嚴重脫水的徵兆
- 持續嘔吐，完全無法保留任何水分
- 症狀已持續超過 3 天且毫無改善
- 您意識混亂，或虛弱到無法站立

街邊攤位、美食廣場、海鮮，以及外送提袋
如果問我們這星期到底是什麼讓某人臥床不起，通常可以追溯到以下四件事之一：
- 街邊攤位與市場小吃：濱城市場與周邊第一郡美食街的生意量極大，有長長人龍、不斷翻新出餐的攤位，通常是安全的選擇。風險在於放在保溫燈下的餐點，或是提前好幾個小時就少量備好、生意冷清的攤位。
- 辦公大樓美食廣場：對第一郡、第三郡與Binh Thanh的上班族來說方便又受歡迎，但美食廣場的廚房是為了應付午餐尖峰而備餐，尖峰過後，有些餐盤放置的時間會超過應有的長度。
- 海鮮：燒烤與生食貝類、螺類，以及海鮮火鍋，是這座城市飲食的一大亮點，但在熱帶高溫下，貝類帶有的細菌量比大多數蛋白質都高，也是我們求助紀錄中反覆出現的元凶。

復原時間軸
大多數食物中毒會在 1 至 3 天內痊癒。以下是治療後大致可以預期的狀況：
- 第 0 至 6 小時：點滴輸液讓您的體液恢復正常。噁心與嘔吐通常在用藥後數小時內平復。
- 第 1 天：只攝取清澈的水分、清湯與稀飯（chao）。您的胃需要休息。
